Vegetable Fried Rice

Ingredients
- 3 cups cooked rice - cold (day-old is best)
- 2 pcs eggs
- 2 tbsp neutral oil - divided
- 1.5 cups mixed vegetables - peas & carrots (fresh or frozen)
- 3 pcs green onions - sliced, white/green parts separated
- 2 cloves garlic - minced
- 3 tbsp soy sauce - to taste
- 1 tsp sesame oil - optional
- None salt - to taste
- None black pepper - to taste
Steps
- Heat a pan or wok over medium-high heat. Add a little oil and scramble eggs; transfer to a plate.
- Add remaining oil. Cook garlic and the white parts of green onions for 30 seconds.
- Stir-fry mixed vegetables 2–3 minutes until hot and tender-crisp.
- Add cold rice, break up clumps, and stir-fry 2–3 minutes until heated through.
- Add soy sauce and sesame oil (optional). Return eggs and toss well.
- Finish with green onion tops. Taste and adjust seasoning; serve immediately.
Notes
Cold, leftover rice fries best. Optional add-ins: chicken, tofu, shrimp, or extra veggies. Add chili flakes or a splash of rice vinegar for extra kick.
