Spaghetti Aglio e Olio

Ingredients
- 200 g spaghetti
- 4 cloves garlic - thinly sliced
- 60 ml olive oil
- 0.5 tsp red chili flakes
- 2 tbsp fresh parsley - finely chopped
- 0.5 tsp salt - plus more for pasta water
- 60 ml pasta cooking water - reserved
Steps
- Bring a large pot of salted water to a boil and cook spaghetti until al dente.
- Reserve about 60 ml (1/4 cup) of pasta water, then drain the pasta.
- In a large pan over low heat, warm olive oil and gently sauté sliced garlic for 1–2 minutes until fragrant (do not brown).
- Add red chili flakes and cook 30 seconds.
- Add drained pasta to the pan along with a splash of reserved pasta water.
- Toss continuously to emulsify the oil and water into a light sauce.
- Season with salt as needed and stir in chopped parsley.
- Serve immediately.
Notes
Keep the garlic on low heat to avoid bitterness. For extra richness, add a knob of butter at the end or finish with grated Parmesan.
