Grilled Chicken Caesar Salad

Ingredients
- 2 pcs chicken breasts — about 400 g total
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 head romaine lettuce — chopped
- 30 g Parmesan cheese — grated
- 0.5 cup croutons
- 3 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic — minced
- 2 tbsp grated Parmesan cheese
- 2 tbsp water
Steps
- Rub chicken with olive oil, salt, and pepper.
- Grill or pan-cook over medium heat for 5–6 minutes per side until fully cooked.
- Let rest 5 minutes, then slice.
- Mix dressing ingredients until smooth.
- In a large bowl, combine lettuce, croutons, and Parmesan.
- Add sliced chicken on top.
- Drizzle with dressing and toss lightly before serving.
Notes
Store dressing separately if meal prepping. Optional: add anchovy paste for a classic Caesar flavor.
