Ginger Carrot Soup

Ingredients
- 1 tbsp olive oil
- 1 medium onion - chopped
- 2 cloves garlic - minced
- 1 tbsp fresh ginger - grated
- 700 g carrots - peeled and sliced
- 750 ml vegetable stock
- 0.5 tsp salt - plus more to taste
- 0.25 tsp black pepper - to taste
Steps
- Heat olive oil in a large pot over medium heat. Add onion and cook 4–5 minutes until softened.
- Add garlic and ginger. Cook 1 minute until fragrant.
- Add sliced carrots and vegetable stock. Bring to a boil.
- Reduce heat and simmer 18–22 minutes until carrots are very tender.
- Blend until completely smooth using an immersion blender or countertop blender.
- Season with salt and black pepper to taste. Serve warm.
Notes
For extra creaminess, stir in 1–2 tablespoons of coconut milk or cream before serving. Keeps in the fridge up to 4 days and freezes well.
