Garlic Shrimp Rice

Ingredients
- 300 g shrimp - peeled & deveined (fresh or thawed)
- 2 cups cooked rice - warm (day-old works too)
- 3 cloves garlic - minced
- 2 tbsp butter - or 1 tbsp butter + 1 tbsp olive oil
- 0.5 pcs lemon - juice (about 1 tbsp)
- 2 tbsp fresh parsley - chopped
- 0.25 tsp salt - to taste
- 0.125 tsp black pepper - to taste
Steps
- Pat shrimp dry and season lightly with salt and pepper.
- Warm butter in a large skillet over medium heat. Add garlic and cook 30–45 seconds until fragrant (don’t brown).
- Add shrimp in a single layer and cook 2–3 minutes, stirring once or twice, until pink and just cooked through.
- Add warm cooked rice to the skillet and toss 1–2 minutes until everything is hot and coated in the garlic butter.
- Turn off heat. Squeeze in lemon juice and stir in chopped parsley.
- Taste and adjust seasoning, then serve immediately.
Notes
If using frozen shrimp, thaw and pat dry well so it sears instead of steaming. Optional: add a pinch of chili flakes or a splash of soy sauce for extra punch.
