Chickpea Curry (Vegetarian)

Ingredients
- 2 tbsp olive oil
- 1 pcs onion — chopped
- 2 cloves garlic — minced
- 1 tbsp fresh ginger — grated
- 2 tsp curry powder
- 1 tsp ground cumin
- 400 g canned chopped tomatoes
- 400 g canned chickpeas — drained and rinsed
- 200 ml coconut milk
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 handful fresh cilantro — for garnish
Steps
- Heat olive oil in a pot over medium heat.
- Add onion and cook until soft (5 minutes).
- Add garlic and ginger. Cook 1 minute.
- Stir in curry powder and cumin.
- Add tomatoes and simmer 5 minutes.
- Add chickpeas and coconut milk.
- Simmer 15 minutes.
- Season with salt and pepper.
- Garnish with cilantro before serving.
Notes
Serve with rice or naan. Improves in flavor the next day.
