Ingredients
- 450 g chicken breast - thinly sliced
- 1 pcs bell pepper - sliced
- 250 g broccoli florets - bite-size
- 2 cloves garlic - minced
- 1 tbsp neutral oil - for stir-frying
- 3 tbsp soy sauce - stir-fry sauce
- 1 tbsp honey - or brown sugar
- 1 tbsp rice vinegar - or lemon juice
- 1 tsp cornstarch - mixed with water
- 2 tbsp water - for cornstarch slurry
Steps
- In a small bowl, mix soy sauce, honey, and rice vinegar. In a separate small cup, stir cornstarch with water to make a slurry.
- Heat a large pan or wok over medium-high heat and add the oil.
- Add chicken and stir-fry for 3–4 minutes until mostly cooked through.
- Add bell pepper and broccoli. Stir-fry for 3–4 minutes until the vegetables are crisp-tender.
- Add garlic and cook 30 seconds until fragrant.
- Pour in the sauce and then the cornstarch slurry. Toss for 1–2 minutes until the sauce thickens and coats everything.
- Taste and adjust (more soy for salt, more vinegar/lemon for brightness). Serve immediately.
Notes
Serve with rice or noodles. Don’t overcrowd the pan—cook chicken in two batches if needed. Swap veggies as needed (snap peas, carrots, mushrooms).
