Ingredients

  • 450 g chicken breast - thinly sliced
  • 1 pcs bell pepper - sliced
  • 250 g broccoli florets - bite-size
  • 2 cloves garlic - minced
  • 1 tbsp neutral oil - for stir-frying
  • 3 tbsp soy sauce - stir-fry sauce
  • 1 tbsp honey - or brown sugar
  • 1 tbsp rice vinegar - or lemon juice
  • 1 tsp cornstarch - mixed with water
  • 2 tbsp water - for cornstarch slurry

Steps

  1. In a small bowl, mix soy sauce, honey, and rice vinegar. In a separate small cup, stir cornstarch with water to make a slurry.
  2. Heat a large pan or wok over medium-high heat and add the oil.
  3. Add chicken and stir-fry for 3–4 minutes until mostly cooked through.
  4. Add bell pepper and broccoli. Stir-fry for 3–4 minutes until the vegetables are crisp-tender.
  5. Add garlic and cook 30 seconds until fragrant.
  6. Pour in the sauce and then the cornstarch slurry. Toss for 1–2 minutes until the sauce thickens and coats everything.
  7. Taste and adjust (more soy for salt, more vinegar/lemon for brightness). Serve immediately.

Notes

Serve with rice or noodles. Don’t overcrowd the pan—cook chicken in two batches if needed. Swap veggies as needed (snap peas, carrots, mushrooms).
