Black Bean Chili

Ingredients
- 2 cans black beans - 400 g each, drained and rinsed
- 400 g canned crushed tomatoes
- 1 medium onion - finely chopped
- 2 cloves garlic - minced
- 1 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp ground cumin
- 0.5 tsp smoked paprika - optional
- 150 g corn - frozen or canned (about 1 cup)
- 250 ml vegetable stock
- 0.5 tsp salt - plus more to taste
- 0.25 tsp black pepper - to taste
Steps
- Heat olive oil in a pot over medium heat. Add onion and cook 4–5 minutes until softened.
- Add garlic, chili powder, cumin, and smoked paprika (if using). Cook 30 seconds until fragrant.
- Stir in crushed tomatoes, black beans, corn, and vegetable stock.
- Bring to a simmer and cook uncovered for 18–20 minutes, stirring occasionally, until slightly thickened.
- Season with salt and black pepper to taste. Serve hot.
Notes
Meal-prep friendly and freezer-friendly (up to 3 months). Optional toppings: sour cream or Greek yogurt, shredded cheese, avocado, or fresh cilantro.
