Classic Banana Bread

Ingredients
- 3 medium ripe bananas - mashed (about 1 1/4 cups)
- 75 g unsalted butter - melted (about 1/3 cup)
- 100 g brown sugar - packed (about 1/2 cup)
- 1 large egg - room temperature
- 1 tsp vanilla extract
- 190 g all-purpose flour - about 1 1/2 cups
- 1 tsp baking soda
- 0.5 tsp salt
- 0.5 tsp ground cinnamon - optional
Steps
- Heat oven to 175°C (350°F). Lightly grease and line a standard loaf pan.
- In a large bowl, mash bananas until mostly smooth.
- Stir in melted butter and brown sugar until fully combined.
- Add egg and vanilla extract; mix until smooth.
- In a separate bowl, whisk flour, baking soda, salt, and cinnamon (if using).
- Fold dry ingredients into wet mixture just until combined. Do not overmix.
- Pour batter into prepared loaf pan and smooth the top.
- Bake 50–60 minutes, until a toothpick inserted into the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use very ripe bananas with brown spots for best flavor. Optional add-ins: 1/2 cup chopped walnuts or chocolate chips. Store covered at room temperature up to 3 days or freeze slices up to 2 months.
